  • 🥬 4 medium Fresh Turnips
  • 🫒 2 tbsp olive oil
  • 🧄 2 garlic cloves, finely chopped
  • 🌿 1 tsp fresh thyme or rosemary
  • 🧂 Salt and black pepper
  • 🌿 Fresh parsley – optional

👩‍🍳 Method

  1. Preheat your oven to 200°C / 180°C fan.
  2. Wash, trim and cut the turnips into evenly sized wedges or cubes.
  3. Place them in a large bowl.
  4. Add olive oil, garlic, herbs, salt and pepper.
  5. Toss everything together until evenly coated.
  6. Spread over a baking tray in a single layer.
  7. Roast for approximately 25–30 minutes, turning halfway through.
  8. Once golden and tender, scatter with fresh parsley and serve.

🛒 Ingredients – Serves 4

  • 🥬 2 medium turnips, peeled and diced
  • 🥔 4 medium potatoes, peeled and chopped
  • 🧈 25g butter
  • 🥛 Splash of warm milk
  • 🧂 Salt and black pepper
  • 🌿 Small pinch of nutmeg – optional

👩‍🍳 Method

  1. Cut the potatoes and turnips into similar-sized pieces.
  2. Place in a saucepan and cover with cold water.
  3. Bring to the boil and cook for around 18–25 minutes, until completely tender.
  4. Drain thoroughly and allow them to steam dry for a minute.
  5. Add butter and a small splash of warm milk.
  6. Mash until creamy.
  7. Season with salt, pepper and a little nutmeg if desired.
